Peanut Butter Oatmeal and Quinoa Protein Balls

Peanut buttery goodness that will satisfy your sweet tooth and give you a protein boost to boot!
Ingredients
- 1/2 c Sugar-free Honey (or the real stuff if you can tolerate)
- 1 1/2 c Old Fashioned Rolled Oats (dry)
- 1/2 c Quinoa Flakes
- 1/2 c Ground Flax
- 1/2 c Vanilla Protein Powder (I used Fit Frappe)
- 1 c Creamy Peanut Butter (or PB2)
- 1 tsp Vanilla Extract
- 1 pinch Salt
Instructions
In a large mixing bowl, combine peanut butter, salt, vanilla and protein powder. Blend until smooth. In a food processor or blender, pulse the oats until they are a coarse meal consistency. Combine dry ingredients in a separate bowl. Slowly mix in dry ingredients with peanut butter mixture until well combined. I found it better to use your hands once you get half of the dry ingredients mixed in. Portion and roll into 1-inch balls. Keep refrigerated. These are best enjoyed after chilling for a couple hours in the fridge.
